Something has happen since the first time I made these, oh about a year ago, and now. I must have somewhere along the way screwed up the cupcakes!
First batch from here:
Delicious as batter, but rubbery as cake. I realized after the fact that I was missing an egg. I made them with 3 instead of 4, which could be why they didn’t really rise. BUT RUBBER CUPCAKES?! Not cool.
So then I began to search elsewhere and came across one of my other well liked blogs, How to Eat a Cupcake:
Beautiful presentation, nice round domes, BUT lacking in flavor.
So then I came to the decision of trying to combine the two recipes and this is what I got:
*cream together*
- 3/4 cup Vegetable oil
- 1 cup+2 tbs. Sugar
- 2 cups cake flour
- 3 eggs
*stir in*
- 1 cup cinnamon applesauce
- 2 tbs. ground cinnamon
- 1 cup finely chopped apple
They were still too similar to the Cupcake Project recipe, but by the third attempt I was tired and knew the drunken idiots at the Halloween party wouldn’t know the difference.
I haven’t given up yet, I’m searching “apple cinnamon muffins” now…
